Ayrburn Farm, established in 1864 by Scottish settler William Paterson, has been lovingly restored by Winton, transforming its homestead, woolshed, stables, and cartshed into elegant event spaces. In 2023, Winton enlisted Easy Big Trees to be of assistance in the supply of high quality trees and plants, marrying heritage charm with modern touches that honour every beam and stone. We at Easy Big Trees are thrilled and appreciative to be part of this stunning project and over the moon with its success.

Gardens That Speak

Pyrus Aristocrat & Lavender - January 2025
PYRUS Aristocrat & Lavender

Against the Southern Alps backdrop, Ayrburn’s landscape unfolds like a living tapestry. Clusters of English box hedges (Buxus sempervirens) and Lavender frame the approach, while stately Quercus Palustris (Pin Oak) punctuate vistas. Native New Zealand Red Beech (Nothofagus fusca) and Mountain Beech (N. solandri) cloaks the lower slopes, and majestic Wellingtonia Redwoods (Sequoiadendron giganteum) soar above glasshouse-cut blooms destined for on-site floral installations. Serene ponds, fed by a waterfall stream, weave through manicured rose and perennial beds, with hidden hedgerow alcoves offering moments of quiet reflection.

Harry Winter Fruit Tree Pruning Tips: It's true alright. Some work now will reap a bountiful harvest next Summer, when you really do get to enjoy the fruits of your labour. The key is to stick to the 3 D's of pruning, getting rid of anything that's dead, diseased or damaged. Go about your work on a dry day and wear a few layers, so you can take them off as needed. Different fruit trees need to be pruned slightly differently but in general, just remember to not get too carried away. Trimming back by about 20% is a good rule of thumb.
